Bunny buns

For General Conference, we, like many of the people who saw the April issue of the children's Friend, made bunny buns.
Here's the recipe, with a few modifications.

2-1/4 tsp. yeast

1-1/4 cups warm water

1/3 cup sugar

1/2 cup butter, softened

1 tsp. salt

2 eggs, beaten

1/4 cup orange juice

2 Tb. grated orange peel

1 tsp. orange extract, optional

1/4 cup powdered milk

5-1/2 cups flour, sifted (you can use 1 cup whole wheat flour)


Proof yeast in the warm water. Add sugar, butter, salt, eggs, orange juice, and orange peel.
Stir in powdered milk and then add the flour to make a soft dough. Knead until smooth and elastic. Let rise for 2 hours, or until double in size. Punch dough down and let stand for 10 minutes. I then made about 16 small (1-inch) balls. Then I divided the rest of the dough into 16 portions and rolled each one into long snake shapes. These I twisted to make the "bunny," putting a ball of dough on each bunny's tummy. Bake for 15 minutes in a 350 degree oven. I glazed them with an orange glaze (3 Tb. orange juice, 1 tsp. orange zest, and 1-1/2 cups powdered sugar). Then I decorated them as best I could, using some cream cheese frosting to hold on the raisin eyes and other stuff.
